Things to do w/teff flour?
What are some good recipes using teff flour? We've made injera & pancakes in the past w/teff, but I'd like to expand our repertoire.
A lot of my cookbooks seem to have some gluten-free recipes but tend to focus on spelt or other flours, omitting teff entirely. I know we could, w/tweaking, substitute teff in a lot of recipes, but I'd love to hear about recipes that really showcase it.
Thanks for any recommendations. I can Google it, I know (& I have!), but would like to hear directly from folks about good stuff that works if possible!
